201103 - Recipe Tuesday - Sweet Potato Stacks

INGREDIENTS
4-5 Skinny Sweet Potatoes
1 Stick of Butter
Tons of Herbs
Pam or Spray Oil
Parmesan Cheese for Topping

DIRECTIONS
1) Preheat oven to 345 degrees. Mandolin thin slice the sweet potatoes and throw them in a large bowl.
2) Melt the butter and toss the potato slices along with your favorite herbs (I love using sage, rosemary, thyme, and garlic) until very well coated.
3) Spray muffin tin with non-stick spray and place as many slices into a neat stack as you can. Make it taller than the top of the cup because it shrinks in the oven.
4) Bake for 25 minutes at the 345 then remove potato stacks. Increase heat to 400 degrees, top with a little parmesan cheese, and place back in the oven for another 10-15 minutes or until starting to get crispy!
5) Enjoy with your favorite meaty entree!
