201229 - Recipe Tuesday - Salsa Chicken Stew
INGREDIENTS
2 lb. bonesless chicken breasts
2 packets of taco seasoning
2 cups of chicken broth
1 cup of salsa
3 cloves of garlic (or 1 tsp. garlic powder)
2 lb. potatoes (sweet or regular) cut into 1” chunks
1 cup of diced bell pepper
1 cup of diced onion
1/3 cup of cilantro finely chopped and loosely packed
DIRECTIONS
1) Cut chicken into strips
2) Combine all ingredients except veggies
3) Place chopped potatoes at the bottom of the slow cooker/instant pot
4) Put chicken and other veggies on top then pour mixture on top too
5) Cover slow cooker and cook on low for 8 hours or on high for 4 hours. If using instant pot, cook on “stew” setting for 25 minutes.
6) Once done, stir in cilantro and break up chicken if you like it smaller or shredded.
