201208 - Recipe Tuesday - "Lasagna Soup"
INGREDIENTS
Carton of Chicken Stock
Box of Noodles
2 Cans of Diced Tomatoes (I like the spicy kind)
1 Small Can of Tomato Paste
1 Can of Tomato Sauce
2 lb. ground beef (or turkey)
Fat Free Ricotta
Garlic/Garlic Salt/Onion Salt
Any other veggies you want to add ….
I like mushrooms, kale, zucchini, and onion
DIRECTIONS
1) Prepare noodles according to package but in the chicken stock.
2) DO NOT drain the noodles!
3) Add all tomato ingredients and cooked beef (which should be skillet browned, seasoned with garlic, and drained before adding).
4) Saute any of the other veggies you enjoy then throw those in too!
5) Stir together and top with a plop of ricotta! ENJOY!
