200915 - Recipe Tuesday - "Jalapeno Popper Chicken"

INGREDIENTS
1 Jar of Jalapeños (sliced fresh would be good too!)
1 Package of Turkey Bacon
1 Package of Laughing Cow Cheese (I choose “light” but “pepper jack” would be perfect!)
1 cup of shredded cheddar
1 - 2 lb. chicken breasts
Your favorite spicy seasonings (garlic powder, red pepper flakes, onion salt, chili power)

DIRECTIONS
1) Preheat oven to 375 degrees.
2) In a mixing bowl, combine sliced up jalapenos, cheddar, 6 wedges of laughing cow, and your favorite seasonings until well blended.
3) Slice turkey bacon in half lengthwise and then in half the other way. Then you’ve got much smaller strips of bacon to work with.
4) Slice chicken breasts to there are about 5-6 slits in the top, be careful not to cut all the way through! Then stuff each new cut with a slice of bacon and some of the cheese mixture. You can put some extra whole jalapenos in there too!
5) Cover with more sesasonings (or breadcrumbs or extra cheddar cheese).
6) Bake in glass container or greased baking sheets for approximately 25-30 minutes. Make sure cheese is a golden brown and chicken is cooked through.
7) Serve with buffalo cauliflower or broccoli and ENJOY!
