200929 - Recipe Tuesday - Breakfast Prep Strategy

When I “meal prep” my food for the week, I “prepare” my breakfasts so I can quickly cook them fresh each morning! I cut up the veggies, airfry/shred the chicken, and roast the potatoes.

Once I get all of that ready:
1) Throw fresh chopped veggies into a small amount of oil and seasonings.
2) Toss in chicken and potatoes so they can warm up and mix.
3) Move everything away from the middle and crack egg into the center.
4) Either cook until done OR scramble into the rest of the mixture.

BOOM! Tasty, flavorful, and FRESH breakfast made easy and quick!
