I often find when I'm trying to up my vegetable intake and generally eat in a healthier way that I get into ruts. I love broccoli and cauliflower, but eating them with every meal gets tedious. If this happens to you too, I suggest taking a look at the grocery store and seeing what's on sale. Buy something you wouldn't usually buy and try it. Who knows, you might find something you absolutely love that you didn't know existed (chayote was that for me a few years back. I bought it because it looked silly and it became one of my favorite things to pair with a pork roast).
This past week I bought a few bunches of radishes because they were both beautiful and on sale. I hadn't cooked radishes before, but had a recipe from one of my favorite sites, Wicked Spatula, and gave it a whirl. They were delicious fresh out of the oven but didn't reheat all that well, so keep that in mind (they still tasted good, but that crispness was lost in microwaving!).
I also topped them with my recipe for spiced yogurt, which is included below. This really hits the spot when you're missing cheese or cream sauce or sour cream. Yes, it's dairy, but it's full-fat yogurt...which is so delicious and pretty awesome in moderation! I like to put this on vegetables, scrambled eggs or egg cups, and chicken dishes.
Crispy Roasted Radishes
adapted from Wicked Spatula (http://www.wickedspatula.com/crispy-roasted-radishes/)
2 bunches radishes (about 20), halved
3-4 T melted coconut oil
1/4 t salt (plus more to taste when done)
1/4 t black pepper
1/4 t smoked paprika
1/2 t onion powder
1/2 t garlic powder
1. Preheat oven to 400 degrees.
2. Toss radishes with melted coconut oil and spices and bake in a rimmed baking dish for 35-45 minutes, until golden and crispy. Add more salt if necessary. Eat immediately!

Spiced Yogurt
1 1/2 c. full-fat plain yogurt
2 cloves garlic, minced
10-ish chives, chopped (can use 1/4 of a medium yellow onion, finely chopped instead)
1/2 t salt
1/4 t black pepper
1/4 t onion powder
1/4 t sesame chili oil
1. Blend all ingredients. Let sit in fridge, covered, at least 4 hours, overnight is best.
2. Taste, and add more salt or other spices if not potent enough.
