201124 - Recipe Tuesday - Brekky Enchiladas

INGREDIENTS

12 eggs

1/2 cup of milk (or heavy cream)

green pepper

onion

turkey sausage

taco sauce

cheese

Tortillas

(optional: black beans, salsa, sour cream)

DIRECTIONS
1) Preheat oven to 350 degrees
2) In a bowl mix up 6 egg whites, 6 whole eggs, and the milk. Add any seasonings that sound good!
3) Cook up eggs in a skillet then set aside.
4) Finely chop onions and peppers then briefly saute in skillet and then toss in turkey sausage to cook fully together. Set aside.
5) Place cheese, eggs, pepper/onion/sausage mix, salsa, and any other goodies in a tortilla. Roll up and place in glass baking dish. Top with taco sauce and a little more cheese.
6) Bake for about 5-10 minutes just to crisp the edges. Remove and ENOY!
