200825 - Recipe Tuesday - BBQ Chicken Cups
INGREDIENTS
1.5 lb. Chicken (Thighs or Breasts)
1 Bottle of BBQ Sauce (I like G. Hughes Sugar-Free Sweet and Spicy)
Wonton Wrappers (Typically found in produce section)
Green Onion
Red Onion
(Optional for Toppings - Shredded Cheese/Pineapple/Cream Cheese/Bacon Bits)
DIRECTIONS
1) Preheat oven to 375 degrees
2) Place chicken on greased baking sheet (covered in foil) and coat with your favorite garlicky seasonings then bake for about 30 minutes
3) Once the chicken is fully cooked, place into large mixing bowl and shred with two forks or with hand mixer. Chop up 1/2 red onion into tiny bits and place into bowl with chicken then coat with desired amount of BBQ. Don’t make it too wet because it will make the wontons soggy.
4) Grease muffin tin and place two wontons alternating directions into each muffin cup. Fill wonton cups with BBQ Chicken mixture and bake for about 20 minutes or until wonton edges are brown.
5) Top with green onion and any other favorite bbq toppings! ENJOY!
