210223 - Recipe Tuesday - Buffalo Chicken Stuffed Sweet Potato

INGREDIENTS
1 lb. chicken breasts or thighs
3 Large Sweet Potatoes
1 Bottle of Franks Buffalo Sauce
Franks Hot Seasoning or Ranch Seasoning
1/2 Cup Sharp Cheddar Shredded Cheese
(Optional: Blue Cheese or Green Onion)

DIRECTIONS
1.) Microwave cook sweet potatoes - Instructions HERE!
2.) Oven bake chicken with Franks seasoning and a little drizzle of sauce on it at 350 degrees for 25-30 minutes. Shred the chicken in a large mixing bowl when cooked.
3.) Slice sweet potatoes in half and shovel out the middle to add to the shredded chicken. Also add cheese and 1/4 cup of Franks.
4.) Scoop mixture back into sweet potato skins until full and put each of them onto a baking sheet covered in foil. Bake until starting to crisp up!
5.) Top with optional toppings and ENJOY!
