210309 - Recipe Tuesday - Tater Crusted Mini Quiche
INGREDIENTS
1 bag Frozen Tater Tots (Alexia brand is my fav!)
12 Eggs
Small Carton of Half and Half
Mushrooms
Arugula
White Cheddar or Feta
Spray Oil
Favorite Seasonings (loving garlic right now)
DIRECTIONS
1.) Place 4-5 tater tots at the bottom of each cup of a greased muffin tin then place in the oven at 350 degrees for about 10 minutes.
2.) Squish the tots at the bottom to create a crust.
3.) Re-spray the tin and place mushrooms, arugula, and seasonings directly on top of the tots.
4.) Mix together 6 whole eggs and 6 egg whites with about 1/3 cup of Half and Half then a little salt.
5.) Pour the egg mixture on top of each cup until it is 4/5 (ish) full.
6.) Bake for about 15-20 minutes or until almost golden then top with a little cheese for about 3-5 more minutes. Cheese needs to be melted and browning.
7.) Remove and let cool! ENJOY with your favorite side of fruit!
