210518 - Recipe Tuesday - Fajita Nachos
INGREDIENTS
2 lbs. chicken
Fajita/Southwest Seasoning
Tortilla Chips
Salsa
Fresh Jalapenos
Low Fat Cheese
Peppers (diced)
Onion (diced)
DIRECTIONS
1) Spray baking pan and place chicken completely covered in seasoning on pan. Bake at 350 degrees for 25-30 minutes depending on thickness of chicken.
2) Dice peppers and onions then saute in pan until carmelized.
3) Take chicken out and dice into small pieces.
4) Place chips at the bottom of a glass or disposable pan, then add a small layer of shredded cheese and place in oven on low broil for 2 minutes.
5) Take pan out and place all other ingredients except salsa on top and broil for another 2 minutes.
6) Top with salsa and ENJOY! :)
