210914 - Recipe Tuesday - "Healthier Shrimp Scampi"

Healthy Homemade Shrimp Scampi
I tossed this lemony seafood creation over some fresh zoodles, green pea spiral pasta, and a scoop of olive tapenade in the center! YUM!

INGREDIENTS
1 Tbsp Kerry Gold Butter
1/2 Tbsp Chopped Garlic
1 Tbsp Chopped Scallions (or green onion)
1 Tbsp Finely Chopped Parsley
1 lb. Tail-On Raw Large Shrimp|
2 Lemons
1/2 lb. Shiitake Mushrooms (halved)

INSTRUCTION
1) Melt butter in large sauce pan and then add garlic, scallions, and parsley. Stir for about 2-3 minutes.
2) Add shrimp and coat in butter mixture.
3) After 2-3 minutes, add mushrooms and a few squeezes of fresh lemon juice.
4) If you need a little more sauce, the “Lemon Garlic” dressing from Lemonette is a perfect addition to the dish!
