Weekday dinners can be stressful, when you get home and you just want to eat...now. Sunday is usually my day to cook for the week, but sometimes I run out mid-week and need to get some meal prep in on the fly. Chicken thighs are easy, a little mustard, olive oil, salt and pepper and you're good to go. But when I turn the oven on I try to put multiple things in to bake, maximizing energy use and giving myself meal options! 

I try to keep some ground pork on hand so I can easily bake off a batch of these burgers, which are delicious and super flexible. I often make a huge quantity of the vegetable mix and add that to eggs for breakfast, pair it with a roasted sweet potato, or just eat it on its own. It's easy to sub in other vegetables if spinach and mushrooms aren't your game, but be sure to cook them a bit first to get rid of extra moisture.

Chili flakes add a nice spice if that's your preference, or just some Tabasco if not. Ground pork is naturally high in fat so you don't need to add anything additional. Also, be sure to think about reheating! If, like me, you make a lot of food to reheat at work, consider slightly under cooking things, especially meats. Dry, over cooked proteins are pretty much the worst, so taking them a smidge under where you normally would, keeping in mind that reheating is going to cook them further, is just the ticket,

Baked Pork Burgers
1 pound ground pork
1/2 medium yellow onion, chopped
1/2 pound mushrooms, trimmed and chopped
2 cloves garlic, minced
1/2 pound fresh spinach, chopped
Salt
Black pepper
1/2 t. garlic powder
1 t. Tabasco
1/4 t. chili flakes
Coconut oil

1. Sauté onions in small amount of coconut oil over medium heat until translucent. 
2. Add mushrooms, garlic, spinach, and a generous pinch each of salt and pepper, and sauté another 3-5 minutes until most moisture has been cooked off.
3. Allow vegetable mix to cool slightly and preheat oven to 375 degrees.
4. Using your hands, mix pork, vegetable mix, salt, pepper, garlic powder, chili flakes, and Tabasco until well blended.
5. Form into patties (I usually make 6-7) and place on a rimmed baking sheet.
6. Bake at 375 for 15-20 minutes, keeping in mind slightly under baking them if you plan to reheat them!
