200623 - Recipe Tuesday - Lean Zucchini Lasagna

INGREDIENTS
2-3 Green Zucchinis or Yellow Squash (or both!)
1 Jar of Sugar-Free Marinara (I like Rao’s or Primal Kitchen)
15 oz. Fat Free Ricotta Cheese
Ground Turkey
Onions
Garlic (or garlic salt)

DIRECTIONS
1) Brown ground turkey and toss in chopped onions and garlic before it’s done. Drain excess fluid.
2) Spray oil into glass pan then add a small layer of sauce.
3) Use a veggie/fruit peeler to create nice thin, long strips of the zucchini and place the first layer right on top of the sauce.
4) Put ground turkey mix, ricotta, and sauce on top. Add another layer of zucchini and repeat until you’re out of everything. IF you want it more cheesey, add a little mozzarella on top of the whole thing! YUM! ENJOY!
