200818 - Recipe Tuesday - "Salmon Nuggets"

INGREDIENTS
1-2 lb. Fresh Salmon (some places with take the skin off for you….do it! Way easier!)
1 c. All Purpose Flour or Almond Flour or Coconut Flour
2 Eggs
1 bottle of your favorite marinade (I used a sugar free teriyaki)
Spices to taste

DIRECTIONS
1) Cut salmon into 1 inch by 1 inch squares and marinade them in a glass dish covered in cling wrap, overnight (or for atleast an hour)!
2) Mix together flour and seasonings. I used Umami, Red Pepper flakes, and Onion Salt from Trader Joes!
3) Dip Salmon into egg, a few at a time, and roll around in flour mixture! Place on greased pan or into airfryer.
4) Cook for 8 minutes at 350 degrees then flip over and cook for an additional 8-12 minutes depending on how done the cubes are! Instant flaking with a fork is a good indication that its done!
5) Let it cook and serve with a stir fry or tasty brussel sprouts and green beans like in the above photo!
