200804 - Recipe Tuesday - Shrimp Quiche

INGREDIENTS
1 - 2 lb of cooked, tail-off shrimps
6 Carb Balance Mission Tortillas
2 Crowns of Broccoli
Bundle of Green Onion
Mushrooms
Cream Cheese (Fat Free)
6 Eggs
Handful of Arugula
Favorite Seasonings ( I used the sour cream and onion one that i have)

DIRECTIONS
1) Preheat oven to 375 degrees and thaw out shrimp
2) Spray glass pie pan with “Pam” or Oil and then layer in the tortillas with oil between each. Place in oven and check every 3 minutes! We want them to get warmed up and crisp on the bottom!
3) Saute or airfry the broccoli coated in some tasty seasonings
4) Blend or super mix the eggs with 6 oz. of the cream cheese
5) Once tortillas are done, place all ingredients in the pan then pour the egg mixture on top
6) Bake for about 20-25 minutes, make sure the middle is completely cooked!
7) Enjoy with a side of watermelon for a tasty summer breakfast!

3 sets of max back rack lunges
