210511 - Recipe Tuesday - Savory Turkey Meatballs
INGREDIENTS
For Meatballs:
3 pounds ground turkey
1 cup Italian breadcrumbs
1/2 cup parmesan
1/2 small onion (finely diced)
2 large eggs
2 Tbsp. favorite seasoning
2 cloves garlic minced
2 Tbsp. BBQ sauce
OPTIONAL: Handful of Chopped Parsley
For Sauce:
2 Cans of Fat-Free Cream of Mushroom Soup
1 Packet of Beef Onion Soup Mix
1 Can of Beef Broth
DIRECTIONS
1) Mix all ingredients of the meatballs together in a bowl by hand. Make sure it is very well mixed!
2) Roll into 1 inch balls and place on a greased baking dish for 15-20 minutes at 400 in the oven OR 15 minutes at 350 degrees in the airfryers. Let cool.
3) Place all ingredients into shallow large sauce pan. Let it come to a boil while constantly stirring. Gently place meatballs into the sauce and reduce heat.
4) Spoon sauce over meatballs and let sit under low heat for about 10 minutes then take off heat and let sit for 10 more minutes.
5) Enjoy over rice or egg noodles! I paired my with roasted garlic potatoes and “philly veggies” for a tasty lunch!
