210622 - Recipe Tuesday - Lemon Dill Smashed Potatoes

I was reminded of one of my favorite recipes today when my favorite green thumbed gardener brought us a huge bag of delicious DILL! I love using it on Salmon with mustard sauce or over popcorn to give it a pickle taste but these potatoes are definitely a perfect summer staple when you need to use your dill!

INGREDIENTS
10-15 Small Golden Potatoes
A bunch of fresh dill
Kerry Gold Butter
2 Lemons
Salt
(Lemon Pepper Seasoning Optional!)

DIRECTIONS
1) Preheat Oven to 380 degrees then heat 4 quarts of water in a large stock pot. Place potatoes into pot and boil for about 15 minutes or until quite soft to a fork poke! Drain but leave potatoes in the pot.
2) Place 2 tbsp of butter, squeezed juice from 1 lemon, a ton of chopped up dill, and a hearty amount of salt into the stock pot and stir potatoes gently to coat them.
3) Grease a cookie sheet and take each potato out then smash it with the back end of a big spoon or flat end of a knife (be careful) to smoosh it! Then when all of them are flattened and on the pan, pour the rest of the butter mixture from the pan on top.
4) Bake for 20-25 minutes or until crispy! Squeeze a little extra lemon, lemon pepper seasoning, and salt on top then enjoy!
